All of our croquembouche are built freehand, and have profiteroles throughout - they don't have a hollow cone inside. The more profiteroles inside the cake, the taller and more impressive it will be, and we will make it as tall as possible while ensuring that there is no risk at all of it collapsing. This croquembouche contains around 300 pieces and was drizzled with chocolate sauce immediately before serving. Our chocolate sauce is made from pure Belgian chocolate and fresh cream - absolutely nothing else goes into it. We can supply it to pour over the croquembouche, or to serve with the profiteroles, at ?25 per litre.
